Autumn salad with chicken and mushrooms – a recipe with a photo

Today we have an autumn salad. It is very filling, bright, tasty and without mayonnaise. It is prepared very simply and quickly.

boiled chicken breast (or beef, veal) – 300 g;
marinated (or boiled) mushrooms – 300 g;
boiled eggs – 4 pcs.;
boiled potatoes – 2 pcs.;
green peas – 1 can;
carrot – 2 pc.;
onion – 1-2 pcs.;
greens (dill, parsley, green onion);
vegetable oil;
salt, ground black pepper – to taste.

The process of preparing an autumn salad.

Grate the carrot on a coarse grater.

Now fry the onion in vegetable oil until soft, and then add the carrots. We stew it for 5-7 minutes, in general – until ready. Stir with a spatula.

Cut boiled potatoes into cubes.

Cut mushrooms (boiled or pickled – at your discretion). Add them to the potatoes.

Cut the eggs into fairly large cubes and add them to the general bowl.

We cut the boiled meat (beef or chicken – it’s up to you) in the same way, and then add it to our products. Here we also add fried onions and carrots.

Add green peas and a lot of greens – dill, parsley and green onions.

Season the salad with ground black pepper, add vegetable oil, mix and add salt to taste.

This salad can also be dressed with sour cream or mayonnaise, or 50/50.
