There are many recipes for cooking azu. Such unimaginable things claim the place of the main ingredient. Among them are beef, horse meat, mushrooms, squid and even beans, but beef will be traditional.

Azu is a Tatar dish, and there is no place for pork in the traditional recipe. But in the modern world, people like to study the national cuisine of different peoples and adapt it to themselves.

pork (meat) – 400 g;
pickled cucumbers – 3 pcs.;
parsley – 6 sprigs;

Pork meat is better to take without fat. In order to make it more convenient to cut pork, it is necessary to disassemble it into segments or, if you have a whole good piece, cut it into small rectangles. The meat should be cut into cubes.

To cook azu, we need a deep frying pan. Pour a little oil into the pan and put it on the fire. Put the meat in a container. Simmer over low heat while stirring.

Cucumbers, of course, are better to take home. They have a pleasant taste and more benefits. Cucumbers are cut into cubes without peeling.

Cut the onion, or rather its half, in half and cut into transparent strips.

Add cucumbers and onions to the meat in the pan. We mix.

While the dish is extinguishing under the lid, we start cooking tomatoes. They must be cut into cubes. Tomatoes should be ripe and juicy.

Parsley must be washed and shaken to remove water. Chop the parsley not very finely, but not in “trees” either. Cut the garlic into thin slices.

Put a spoonful of tomato paste in the pan and mix it well with the meat. Then we add the remaining ingredients: chopped tomatoes, chopped parsley, garlic, ground pepper and salt. Mix everything and cover with a lid. Simmer for 10 minutes.

— Pepper occupies a special place in the azu recipe. It is believed that azu translates as “meat in hot sauce”, which means that there should be a lot of pepper. Of course, this is not a taboo for people with a weak stomach, it is better not to add pepper at all. The taste will change, but it will remain interesting.

– Aza can be cooked in pots, or in a slow cooker. Pots produce portioned meals, and cooking in a slow cooker has recently become fashionable.

— There is also an opinion that cooking should be done with simmered oil, not vegetable oil. And in order to feel the difference, you need to prepare two options at once.

– You can add coarsely chopped carrots to the azu. But then it must be fried immediately with meat.

— Some make a spicy sauce first: sour cream is mixed with tomato paste and broth and a lot of pepper is added. And then this sauce is added to the meat and cucumbers. Or first let the cucumbers infuse in this sauce, and then add fried meat and onions to it.
