Beetroot, carrot and cheese salad – recipe with photo.

This salad was born completely by accident. After cooking “Herring under a fur coat”, I had boiled beets and carrots left over. Well, don’t get lost in the products? Therefore, I decided to cook something from them.

After conducting an audit in the refrigerator, I found hard cheese, greens and sour cream. I decided to make a salad from all these products. To be honest, I was skeptical about such a set of products and, as it turned out, it was completely in vain! It turned out a rather original and tasty salad.

It is prepared very simply and quickly (especially if beets and carrots are already boiled). All the products we need can always be found in the refrigerator. And the result will please even the pickiest eaters (tested on my husband, who is very difficult to please). But this salad was a hit with us!

— 1-2 beets (depending on their size);
— 1 medium carrot;
— 100 g of any hard cheese;
– any greens to your taste (I have dill and parsley);
— 2-3 tablespoons of sour cream or natural yogurt;
– salt and ground pepper to taste.

Boil or bake beets and carrots (I had them boiled). Peel the beets and cut them into small cubes.

Do the same with carrots.

Cut the cheese into cubes of the same size that we used to cut our vegetables.

Finely chop the greens.

Add sour cream or yogurt to our products. Salt and pepper to taste.

Mix everything well.

That’s actually all. The description of the recipe took me more time than the preparation of this salad.
