Blackcurrant jam. How to make jam.

black currant – 1 kg;
water – to taste;
granulated sugar – 800 g;
vanilla sugar – 1 bag.

Summer is the best time for a variety of preparations. Now is the time to buy various fruits and berries to prepare aromatic sweet jam for the winter, which will remind you of summer days. Today I want to share with you a recipe for preparing black currants.

A step-by-step recipe for blackcurrant jam.

We need the densest, clean, fresh, ripe currants. Sort the berries, wash them from twigs and dust.

We spread the berries in two containers, there should be three times more berries in one container.

Grind the berries in a larger bowl with a mixer or an immersion blender. Currants will immediately release aromatic juice.

Add the remaining berries and mix.

Add sugar and vanilla sugar. This is optional, vanilla will just make the jam even more fragrant. At this stage, we add very little water. If the currant is watery, then you can not do this.

Put the pot with berries on medium heat, bring to a boil. Remove the foam.

Cook the jam over low heat for 30 minutes, until the foam evaporates, and the jam acquires the desired thickness. Let me remind you that pectin is a natural thickener in black currants, so the jam will thicken even more during cooling. Remove the finished jam from the heat.

Pour hot jam into jars, twist. We turn the jars upside down and let them cool like this.

That’s it, blackcurrant jam is ready, you can invite guests to tea! Jam is great for baking, it can be added to porridge, cheese or just eaten with a spoon.
