Cabbage in batter

1. Separate the cabbage into leaves, put in salted boiling water and boil for five minutes. After that, put it in a colander and cool it under a stream of cold water. Cut the thickening from the leaves.

2. Beat the eggs, add salt and pepper, add carbonated water and gradually add the sifted flour, mixing thoroughly until the batter becomes the thickness of fatty sour cream.

3. Dip each leaf in the batter and fry in hot oil on both sides until a golden crust forms. Serve hot, garnished with greens to taste.

* If desired, you can add half a teaspoon of paprika or tomato paste to the batter – then it will acquire a brighter color.
