For cheesecakes, I advise you to take dry sour milk cheese, then you will not have to add a lot of flour to it, and the less flour in the cheesecakes, the more tender and fluffy they will be.
You can use any berries you like for the sauce. It can be currants, strawberries, blackberries, blueberries, cherries, etc.
From the specified number of ingredients, I got 14 cheesecakes.

First we prepare the sauce. Pour water (300 ml) over the berries, add sugar, quickly bring to a boil and boil for 3 minutes over medium heat.

Dilute the starch in 50 ml of water and pour it into the cherry syrup in a thin stream. Cherry syrup should be constantly stirred with a spoon. After about 10 seconds, remove the sauce from the heat and cool. The berry sauce is ready.
