The garden near the house is wonderful! I was convinced once again when white cherries ripened under the windows. This year she is simply gorgeous. Berries are asked in a jar to delight us with the warmth of the sun and the aroma of summer on frosty days.
Since this year’s harvest is excellent, in addition to cherries in their own juice and light cherry jam with lemon, I decided to prepare an improved version of last year’s jam recipe. The following products are required for making cherry jam.
Ingredients:
— 12 glasses of pitted cherries;
— 12 glasses of sugar;
— 2 glasses of pitted cherries;
– 2 oranges;
– 2 lemons.
How to cook cherry jam.
So, in order to cook delicious jam, you need to take fresh cherries, wash them under running water and sort out branches, leaves and other “garbage”.
Next, you need to separate the berries from the seeds. You can use a special device for this (I don’t know what it’s called), or you can do everything “by hand”. Cover the cherries with sugar and cook in an aluminum pan until boiling. We make a small fire and cook for 10 minutes.
During this time, we remove the seeds from the cherries and twist them together with the oranges and lemons in a meat grinder.
Add the cherry-citrus mixture to the pan and cook over low heat until the cherries are transparent. It should absorb sugar, change color and become a little reddish because of the cherries.
When these changes occur, pour the jam into clean, dry jars.
To prepare the jars for making jam, I rinse them with vinegar and dry them (this is instead of scalding with boiling water). This method has never failed me. I was taught to do this by my mother-in-law, who has been using a simplified method of preparing cans before canning for many years.
We roll up the finished cans with lids and put them in the cold. Leftover jam will be very useful even now – during the cherry season, as the taste of the jam resembles a citrus delight, but with a hint of cherry. Cook for health and please your relatives with summer taste in winter!
