Put the frozen cherries in a saucepan and pour two liters of water. Bring to a boil, add sugar and cook over low heat for 15 minutes.

Place potato starch in a small bowl, pour a small amount (100 ml) of cold water and mix well.

After that, pour the diluted starch in a thin stream into the boiling compote, which should be constantly stirred with a spoon so that no clots form.

As soon as the jelly boils, it should be removed from the heat. Pour warm or cooled jelly into glasses or dessert dishes and serve. Cherry jelly is ready.
