Ingredients:
1 glass of coconut milk
2 boneless and skinless chicken breasts,
¾ cup walnuts,
¾ cup almonds,
½ cup of grated coconut,
1 teaspoon of ground black pepper,
1 teaspoon of garlic powder,
¾ teaspoon of salt,
½ cup vegetable oil.
Method of cooking:
Cut the chicken breast fillets across the fibers.
Dip the pieces in coconut milk and leave to marinate for 30 minutes. Then drain the milk. Sprinkle the chicken with pepper, garlic and salt on all sides. Set aside for a minute.
Grind walnuts, almonds, grated coconut as fine as possible in a food processor.
Roll the pieces of chicken in the nut mixture, slightly pressing it into the chicken fillet, so that a uniform breading is obtained.
Heat the oil in a pan and fry the chicken pieces in it until golden brown on each side. Flip carefully so as not to damage the breading.
Transfer the fried pieces to a napkin to drain the excess oil.
Serve the breasts warm with salad or rice. To enhance the nutty taste, you can pour nutty sauce over the chicken before serving.
