Chicken with couscous in the oven – a recipe for cooking dinner.

Ingredients for chicken:
chicken – 1 pc.;
zira – 1 teaspoon;
smoked paprika – 1 tsp. (can be replaced with regular paprika);
coriander – 1 teaspoon;
salt, pepper – to taste;
vegetable oil – 1 tbsp. L.;
lemon – 1 pcs.

Ingredients for garnish:
couscous – 1 glass;
red onion – 2 pc.;
carrot – 2 pc.;
bell pepper – 2 pc.;
salt, pepper – to taste;
fresh mint – 3 sprigs.

How to cook chicken with couscous in the oven.

I prepared the ingredients. She cut off the umbilical gland (for disposal) and the extreme phalanges of the wings (in the freezer for broth).

Coated the chicken with marinade inside and out and put it in a basin under the lid in the refrigerator. I had a few hours before dinner. But you can fry right away, it’s not essential.

Vegetables. There was no red onion, the usual one was used. I have everything small, so the amount here is slightly increased.

She cleaned the vegetables, cut the pepper into petals, and cut off the bottom of the lemon.

Pepper was left alone, carrots and onions were cut into quarters. Large pieces are needed.

She stuffed the lemon into the chicken’s stomach.

I put the chicken on a deep baking sheet. And sent to bake. I bake in 2 stages: first 15 minutes at 200 degrees (the oven is heated) to seal.

Then I take it out, reduce the heat and fry for another 1 hour at 180 degrees with vegetables. So, I repeat, I take out and add vegetables. The vegetables will caramelize in the chicken fat. These will be very tasty fried vegetables. Periodically, the oven should be checked, the chicken should be watered with juices, and the vegetables should be monitored so that they do not burn. Everyone has different ovens and pieces of different thickness.

When everything is fried, together or one by one, I remove everything from the tray to a plate.

I pour couscous on the baking sheet.

I pour two glasses of water (proportion 1:2).

I dissolve the fritters in water and send the sheet back to the hot oven for 5 minutes.

I still cut the vegetables more finely.

Couscous, ready. He quickly absorbed the water along with the fried foods dissolved in it.

I added chopped vegetables and juices from the chicken.

I mixed everything well.

I added lemon juice from the belly to taste (I add no more than half).

I added fresh mint, only leaves. You can’t do without mint. Well, that is, you can, but fresh mint greatly affects the taste.

Tried and balanced salt, acid and pepper. Sweetness is given by baked vegetables.
