chicken breast – 700 g;
garlic – 2 cloves;
curry – a pinch;
black pepper – a pinch;
olive oil – 2 tbsp. L.;
seasoning for chicken or gyros – 1/2 teaspoon;
red, green and yellow pepper;
sweet paprika – a large pinch;
water or broth – 50 ml;
white rice – 200 g (weight before cooking, two bags);
salt and pepper – to taste.

If I don’t have much time to prepare a healthy dinner, I always make chicken with rice and vegetables. The recipe is very easy to prepare, very filling and very tasty. Chicken with rice is a very easy dish to prepare. Very filling and at the same time tasty.

I usually make chicken rice with colorful peppers, but you can also replace them with mushrooms, zucchini, broccoli, or use ready-made frozen foods from the store, such as mixed vegetables. Do you want to enrich the taste of this dish? I suggest adding some ready-made sweet and sour sauce or sweet chili sauce, which you can easily buy at any large store.

The process of cooking chicken with rice and vegetables.

  1. In a small bowl, mix olive oil (2 tbsp), crushed garlic (1 large clove), curry powder (a large pinch), black pepper (a pinch), and chicken or gyros seasoning (1/2 tsp). Mix and grate the chopped meat (about 700 g of chicken). I usually wrap such marinated meat in cling film and fry it only after an hour or more. However, this is not a mandatory procedure. Simply thanks to this, the chicken turns out to be juicier and more fragrant, as it will be in the spices longer.
