Put the cream and bitter chocolate in a water bath and, stirring from time to time, completely dissolve the chocolate (do not bring to a boil). Then remove the pan from the heat and cool to room temperature.

Put egg yolks and sugar in a separate bowl and beat with a mixer.

It is necessary to beat for 2-3 minutes, until the mass does not lighten.

Add the beaten egg yolks with sugar to the cooled cream with chocolate.

Beat the resulting mass with a mixer, put it again in a hot water bath and on a low heat so that the cream does not boil in any case, cook for about 10-15 minutes so that the mass thickens a little. At the same time, the contents of the pan should be constantly stirred.

Then remove the pan from the water bath, put it in a bowl of cold water and continue stirring the cream until it cools completely.

After that, put the peeled nuts on a dry pan and fry them evenly.

Grind the nuts with a blender or knife, add to the cooled cream and mix thoroughly (you can beat with a mixer).

Transfer the mass to a vessel suitable for freezing and place in the freezer for about 4 hours. After the ice cream has stood for 30 min. in the freezer, it should be thoroughly mixed. Another 30 minutes later. mix it again. This is done so that ice crystals do not form. Chocolate ice cream is ready.
