Ingredients:
During Christmas Eve, Orthodox Christians prepare a special dish – lentil (or kutyu). It is cooked from wheat or rice grains, honey, poppy seeds, nuts, and raisins are added. According to Slavic traditions, grain symbolizes resurrection life, and sweets symbolize the sweetness of life in the future. At the table, soup should be eaten first, and each member of the family should eat at least a spoonful.

Wheat grains – 1 cup.
Water – 2 glasses.
Honey – 3 tablespoons.
Walnuts – 100 grams.
Sugar sand – 2 teaspoons.
Raisins – 200 grams.
Poppy – to taste.

Method of cooking:
Pound wheat grains with a pestle in a mortar. Periodically add a little warm water so that the wheat seeds are separated from the husk.

Put the prepared wheat grains in a small cast iron or ceramic pot, fill it with cold water, and cover it with a lid. Heat the oven to 160°C and let the porridge cook for about 1 hour so that the water is completely absorbed. If the grains remain hard, pour a little boiled water into the pot and keep it in the oven a little longer. Add granulated sugar to the porridge, mix with a spoon and leave to cool.

Pour the poppy seeds with boiling water for 20 minutes, then drain the water and grind them with a pestle and mortar.

Rinse the raisins with a colander under cold water, transfer to a bowl. Pour boiling water and leave for 15 minutes. Then put it in a colander and leave it to cool.

Peel the walnuts with a nutcracker, leave a few walnut halves for decoration, pound the others in a mortar with a pestle.

Add poppy seeds, walnuts and raisins, honey to the porridge and mix with a spoon. The honey filling will soak the wheat grains, and a little will remain at the bottom of the plate, so the dish turns out juicy.

Garnish with walnut halves. The broth can be placed in serving plates or served warm on a common serving plate.

– Different nuts can be used for the broth – peanuts, almonds, walnuts or a mixture of nuts.

— Ready lentils can be sprinkled with a mixture of powdered sugar and cinnamon.
