1) Beat the egg yolks in a saucepan, mix with sugar and vanilla, grind and dilute with hot cream or milk, then put on fire and cook, stirring all the time with a wooden spatula.

2) When the mixture thickens slightly and the foam disappears from the surface, remove the pan from the heat, strain the mass through a sieve (pierce with a blender) and cool.

3) Pour the cooled mass into a mold and put it in the freezer.
