Custard cream – a recipe with a photo
Today I want to share with you a recipe for a very tasty custard using a simple technology. There are different ways to prepare such a cream. I have been using this method for the last couple of years and I really like it. The cream is prepared quickly, it turns out gentle, uniform without lumps and without any effort. You just need to follow the technology exactly.
Ingredients:
milk – 700 ml;
eggs – 2-3 pcs.;
sugar – 180 g;
flour – 85 g;
vanillin or vanilla sugar;
butter – 50-150 g.
The process of making custard cream.
Rinse the pan with cold water and pour out the milk. Add sugar. Heat until hot over medium heat until the sugar dissolves, stirring occasionally.
Beat the eggs with the flour for a short time, just until a homogeneous mass is obtained. Pour in 1 ladleful of hot milk, mix.
Pour in another ladle, mix again. Now we pour this egg-flour mixture into a saucepan with hot milk, which begins to boil. Pour in carefully, taking your time, with intensive stirring. It is best to do this with such a whisk to avoid the appearance of lumps.
Bring the cream to a boil over medium heat with constant intensive stirring. It is not long, literally 2-3 minutes. The cream begins to thicken right on the eyes. At the end, add vanilla (I had vanilla essence).
Another very important point โ I recommend cooking the custard in a pan with a thick bottom. Because it can burn well to a pan with a thin bottom. The custard is ready.
For tenderness, always add good butter – either immediately to the ready hot cream or let the cream cool, then beat the butter and add to the cream in parts, continuing to beat. You can cool the cream gradually, immediately wrap it with cling film so that an unpleasant thick crust does not form on it.
Or you can pour the cream into a cold dish and place it in a cold water bath, stirring with a whisk.
I added 120 grams of butter. First, beat it with a mixer for a minute, then add it to the cream in parts, continuing to beat it into a homogeneous mass.
Very tasty custard is ready.
