3,5 cups of flour;
1 cup of boiling water;
100 grams of butter;
1 egg;
1/2 teaspoon of salt.

3 cups of cherries;
4 tablespoons of sugar;
1,5 tablespoons of starch.

How to cook dumplings with cherries.

First of all, when preparing dumplings with cherries, you need to prepare the filling. Remove pits from cherries and cover them with sugar. After a couple of hours, when the cherry has released a lot of juice, discard it on a sieve. Do not throw away the juice and bones, they will be needed for making syrup.

Add oil and salt to boiling water, bring to a boil.

Then carefully pour into a bowl with sifted flour, mix. Quickly mix the eggs into the dough, if it is too sticky, add more flour. Knead a smooth, soft dough, cover with a napkin so that it does not dry out. Dumplings from such dough are never boiled, it is very elastic, and it can be rolled out into a very thin layer.

If the cherry has already melted, add starch to it and mix. But do not remove it from the sieve, it will still give juice. Pinch off about 1/5 of the dough, roll it out into a thin (2-3 mm) layer, cut circles with a glass.

Put a little filling (2-3 cherries) on the circle, tightly pinch the edges. I love sour dumplings, and I have enough sugar that I add to the filling. But since most of the sugar drains with the juice, you can additionally add sugar to the cherries before pinching the dumpling, so they will be sweet.

Place the dumplings on a floured board.

Cook the dumplings for 6-8 minutes in a large amount of salted water, exactly as much as you can eat.

Other dumplings can be stored in the refrigerator until the next cooking. Ready dumplings can be greased with butter or cherry syrup. To prepare the syrup, bring the juice left over from the pitted cherries to a boil and strain it.
