Eggplant salad, mayonnaise and eggs – a recipe with a photo

Today is a recipe for a very tasty, simple and hearty salad that is prepared simply, quickly and inexpensively. The main ingredient of this salad will be eggplants.

Ingredients:
eggplants – 2 pcs.;
onion – 2 pcs.;
eggs – 5 pcs.;
tomatoes – 2 pcs.;
dill;
garlic – 2 cloves (to taste);
salt;
pepper;
oil for frying;
mayonnaise – 1 st. l.

The process of making eggplant salad.

Cut the eggplants into fairly large cubes. We send it to a deep container and add salt. Pour water, mix everything well and leave for a few minutes so that all the bitterness comes out of the eggplants.

Cut the onion into half rings and fry until golden.

During this time, the eggplants have already released juice. We need to rinse them well, wash and dry them. Eggplants should be fried in a small amount of vegetable oil until golden brown. We send them to a deep container and let them cool completely.

Boiled eggs are cut into fairly large pieces. We send to the eggplants, which have already cooled down.

Cut the tomato into large cubes. Chop the dill. We send to the rest of the ingredients. Add garlic and pepper to taste.

This salad can be dressed with mayonnaise or sour cream. Mix everything well. Such a salad can be prepared both for dinner and for the festive table.
