Preparation:
Peel the eggplants, cut them into circles (about 0,5 cm thick). Roll each eggplant circle in flour on both sides and fry on each side in vegetable oil. And, put each fried eggplant circle on a napkin (so that the excess oil melts, literally for 2-5 seconds), then put it in a deep plate, and while it is hot, mash it with a fork until it looks like porridge.

When all the eggplants are mashed, add a little (literally a small pinch) of salt to taste, 1 clove of garlic, mayonnaise. Mix everything thoroughly and spread on brown bread. Bon appetit.
