Eggplants with meat – a recipe for the second dish.

Fragrant and tasty eggplants with meat is a wonderful dish that you can offer to your family for a hearty and pleasant lunch or dinner. The combination of all products in it is perfect, besides, it is prepared very easily, simply and quickly. In order for eggplants to keep their shape and look appetizing and beautiful on a plate, I first fry them separately.

Believe me, it does not take much time, but gives an excellent result. You can use any kind of meat for this dish, I most often use pork – it cooks faster and is more tender and juicy than beef.

Ingredients:
about 1 kg of lean pork;
3 small eggplants;
1 large carrot;
1 bulb;
1-2 bell peppers;
1-2 tomatoes;
salt, spices, seasonings to taste;
vegetable oil;
juice of half a lemon.

Cooking eggplant with meat.

Cut the meat into medium pieces, add salt, spices, seasonings, a couple of tablespoons of oil and lemon juice to it. Mix thoroughly and leave to marinate for one hour, or overnight in the refrigerator.

Separately, over medium heat, fry the cut eggplants in an almost dry frying pan (just lightly sprinkle with oil) on both sides until golden brown.

Next, fry the pork for 20-25 minutes over low heat until cooked, stirring occasionally.

Add chopped carrots and chopped onions to it and cook together for 15 minutes.

Then we put bell pepper and tomatoes cut into strips (if desired, you can remove the skin from them beforehand), stew for another 10 minutes.

Add fried eggplants to the ready and soft meat, mix everything carefully. Cover with a lid and simmer the dish for the last 5-7 minutes. During this time, the blueberries will be saturated with juice and aroma and will become tender and juicy.
