Entrecote in the oven – a recipe with a photo.

I am publishing the recipe for the long-promised pork entrecote. Apparently, the dish seems cool, but in fact it is prepared simply. Skill is needed only when cutting meat, making incisions. To facilitate cutting, I can only advise you to put the meat in the freezer for a while and freeze it a little. The meat will “seize” a little and it will be easier to cut.

What is an entrecote? Entrecote (French word) is a palm-sized piece of meat cut between the backbone and ribs. Entrecote can also be on the bone, in this case the thin edge is cut along the bone and cooked together with the bone. In recipes, the name double entrecote is sometimes found – these are pieces of meat cut between 2 ribs.

It takes about 10 minutes to prepare fried entrecote on the stove (in a pan). My recipe is baked entrecote. Baking time is about 15 minutes. In order for the meat to turn out juicy, start checking its readiness after 10 minutes, do not dry it out!

In order not to turn out banal baked meat, I decided to add chopped nuts (almonds and walnuts, you can use others to your taste) and tomatoes. Pork entrecote was baked in the oven under a cheese cap. Meat is very tasty to eat with mustard and vegetables. The number of ingredients is calculated for 4 servings.

Ingredients:
pork entrecote – 800 g;
salt, ground black pepper – to taste;
fresh tomato (not large) – 2 pcs.;
walnut – 20 g;
almonds – 20 g;
grated cheese – 80 g;
vegetable oil – 2 tablespoons;
lettuce leaves for decoration.

Wash the pork, dry it, make cuts that are not all the way through. Salt and pepper to taste.

Wash tomatoes, cut into slices. Then prepare the nut filling. Throw almonds and walnuts into the blender bowl, grind to a crumbly state.

Place ground nuts and tomato pieces on the pieces of meat. Wrap a piece of meat in a roll.

Repeat the procedure, also lay out chopped nuts and pieces of tomato. Again, wrap a piece of meat in a roll.

You should get 2 mini meat-based rolls.

Grate the cheese on a coarse grater. Line the baking sheet with foil, grease with a small amount of vegetable oil. The foil was laid with the glossy side up, so the product will be cooked faster, as the glossy side reflects heat. Accordingly, if the meat begins to burn, cover the top with foil so that the matte side is inside, and the glossy side is outside.

Place entrecote with tomatoes and peanuts on foil and sprinkle grated cheese on top. Bake the meat in an oven heated to 180 degrees for about 12-15 minutes. The entrecote is cooked very quickly, so do not dry out the meat.

Serve the pork entrecote hot. Decorate a flat plate with greens and vegetables.
