Frittata is a very popular omelet with various fillings in Italy. Cheese (of various types), vegetables, mushrooms, dried or smoked meat, various greens, etc. are often added here. Today we will prepare a frittata with bacon, bell pepper and corn – a very simple, but tasty and filling dish for breakfast. and not only that
Cut the leek into rings.
Cut the bacon into strips.
Clean the bell pepper from the stalk, seeds and also cut into straws.
Grate the cheese.
Chop the parsley with a knife.
Beat the eggs with a whisk.
Add cheese, salt, ground black pepper to taste to the eggs and mix.
Fry the leeks in olive oil until soft.
Add bacon, fry over low heat until golden brown.
Then add corn and bell pepper. Stir, add a little salt and, stirring, stew for 3-4 minutes. so that the pepper softens a little.
Add chopped parsley, mix. Then pour the cheese and egg mixture over the vegetables. No need to stir.
Keep the dish on very low heat for 3-4 minutes until the edges of the frittata are set.
After that, place the dish in an oven heated to 180 °C or put it under the grill and bring it to readiness there. As soon as the frittata thickens completely, it should be removed from the oven, cut into portions and served. The frittata is ready.
