Frittata with potatoes – a recipe for cooking the dish.
A frittata is when you need something urgently and there is nothing to eat. This is a simulation of hot food. It can be made from anything, including eggs. This frittata was my answer to another question, what are we going to have for dinner, after my return from another business trip. We will mix what we have, fry it and eat it.
During the audit, eggs, potatoes and a piece of smoked brisket were found. This is quite enough for a full dinner. I remember when my parents ran out of money, and they ran out regularly about a week before payday, my mother would always fry potatoes and put scrambled eggs on top. It was delicious.
Ingredients:
potatoes – 800 g;
salt – to taste;
nutmeg – 1 pinch;
smoked brisket – 150 g;
cabbage – 120 g (you can not add);
eggs – 7 pcs.;
milk – 2/3 cup;
dry thyme – 1 teaspoons;
butter – for frying.
For raita: (it is a salad with spices and yogurt)
— cucumber, dill and yogurt are mixed by volume in a ratio of 1:1:1.
cucumber – 5 pcs. small chops;
yogurt – to taste, about 300 g;
lemon juice – to taste, squeeze about 1 cm of lemon;
salt – to taste, generally hard;
dill – 1 bunch, equal in volume to cucumbers;
unrefined sunflower oil – 1,5 tbsp. l.
How to cook a frittata with potatoes and smoked brisket.
I immediately cut the potatoes into slices about 7 mm thick. I will cook in the microwave – it’s faster. 20 minutes at power 800, from cold water until done.
I pour water, you can pour 1/2 the volume of potatoes, it is not necessary to completely cover it. The more water, the longer it will have to be heated. The water boils, a steam bath is created under the lid, the potatoes are cooked perfectly. I threw in salt, pepper and nutmeg.
Nutmeg complements the natural flavor of potatoes very well, but in this dish I wanted the thyme to play a role, so I added nutmeg to the water – so that there was only a hint of it in the finale.
There was not enough brisket. It could be more. Okay, let’s consider it a spice.
She cut it into small pieces and threw it on a small fire to melt the fat.
While I was engaged in cabbage. Cabbage does not play any special role here, except to calm the soul.
Fragrant smoked fat from the brisket melted. I can fry other goodies on it.

I remove the fried cabbage with smoked meats from the pan. I add a little oil there.
I fry boiled potatoes in smoked oil – just 2 minutes is enough. The seasoning called “butter” went into the pan. I was not mistaken, it is the seasoning, the dose is homeopathic.
I fried some potatoes, put the brisket with cabbage back there. I mixed it. You can salt.
7 eggs (there are five, and I added two later, I didn’t count).
Beat with a whisk with milk, salt and pepper. Given that, for the most part, the casserole consists of eggs and potatoes, salt should be decent.
I poured the mixture over the filling in the pan, held it for a while until it warmed up, three minutes, no more.
And sent it to the oven heated to 180 degrees for 20 minutes. Right in the same pan.
In the meantime, I made a quick salad. Potatoes with eggs are dry, starchy, and protein. Vegetables are needed. Freshness is needed. So I will make raita (salad, in yogurt). Finely chopped cucumber and dill in equal proportions, seasoned with lemon.
I poured a lot of yogurt, so that the salad became more like yogurt with additives. Added aromatic unrefined sunflower oil.
This is half-salad, half-sauce. You can also use garlic. Meanwhile, the frittata is ready. On the first evening, she was dinner. Then it became breakfast and a side dish for lunch.
