Holiday salad with beets and chicken – a recipe with a photo

When a memorable date for two comes, you want to cook something special. It may not be very difficult, because you won’t be standing by the stove all day, but the presentation must be beautiful, and the dish must be tasty. Therefore, I want to suggest you prepare a leafy salad with chicken and beets. It is very tasty, tender and beautiful!

Ingredients:
beetroot – 250 g;
garlic – 2 cloves;
pitted prunes – 60 g;
smoked chicken – 180 g;
chicken eggs – 4 pc.;
hard cheese – 200 g;
mayonnaise – 400 g;
salt – to taste;
spices – to taste;
cranberry – for decoration.

Salad preparation process.

To prepare it, you need to boil (or bake in foil in the oven) beets in advance, boil chicken eggs until ready. Put both of them in a cool place for cooling, and it is best to pour cold water over the eggs, then it will be much easier to clean them.

Peel the prepared beet, grate it on a large beet grater. Grated beets are softer and “play” better in a salad than diced beets.

Place on a flat plate. Let’s make a heart-shaped salad. It turned out to be quite simple. Defects and corrections (red marks from beets) can be easily removed with a paper napkin.

Salt the beets a little (just a little) and grease with mayonnaise. I make a mayonnaise grid.

Sprinkle chopped garlic on top.

Next, we lay out finely chopped prunes. You can probably replace it with raisins if you don’t like prunes.

Cut the smoked chicken smaller.

Sprinkle spices on top of the chicken. I have Provence herbs with salt. They look great with chicken! You can get by with regular pepper if you don’t want to add extra notes to the overall flavor bouquet.

We make a mayonnaise grid on top again.

We clean the chicken eggs. You can cut with a knife or an egg cutter, but I like to use a large grater – quickly and accurately. We spread the eggs with the next layer of salad.

Grate hard cheese on a fine grater. We lay it on top of all layers so that nothing is visible through the cheese – the cheese serves as a “blanket” of the salad and its decoration at the same time.

Of course, you can additionally decorate with something else. Better something bright. I used cranberries, but if you have pomegranate seeds on hand, that would be great too! We mark the contour of our heart and “throw” a little more bright shades on the very heart of the salad.

The salad turned out just great! It will appeal to both men (there is also meat) and women (it is not very heavy). Sweet taste!
