Homemade dumplings with cheese – a recipe for cooking.
Well, who among us does not like dumplings? Probably, there is no such person who would resist this dish, it has become a good tradition in our family. It is home-made dumplings that are tender and soft, they disappear with the speed of sound and are in no way comparable to store-bought ones. But our family treats dumplings with cheese in a special way – I rarely cook them, but if I do, then only with homemade ones with cheese and homemade sour cream, so you can imagine how delicious it turns out.
Ingredients:
For the dough:
wheat flour of the highest grade;
a little warm water;
1 chicken egg;
a small pinch of coarsely ground salt.
For the filling:
cottage cheese;
1 chicken egg;
a little salt;
a small piece of butter – to grease the dumplings;

Step-by-step preparation of dumplings.
Let’s start by preparing the dough for dumplings. In this matter, the main factor remains the right choice of flour. Flour must be selected of the highest grade and of good quality. If the flour is of poor quality, the dough for dumplings may “float”, it will be very difficult to shape them, and they will spread themselves. Pour the flour into a deep container, add 1 chicken egg, salt and a little warm water.
We mix all the components until we get a dough without lumps. It turned out to be too thin for me.
Therefore, we slowly start adding flour to it until it becomes thick and a little stiff. The dough for dumplings must be well kneaded so that it will be easier to work with later. When the dough is ready, leave it to stand for a while.
Let’s prepare the filling for dumplings. Take a deep bowl and pour cottage cheese into it. I use low-fat cottage cheese.
Add a chicken egg and a small pinch of salt to it. The egg will add viscosity to the curd and it will not fall apart when trying to mold the dumpling.
Mix well all the components until a homogeneous mass is formed. If there is a lot of cheese, you can add another egg, but be careful that the cheese mass does not become too liquid as a result, otherwise it will float.
Let’s return to our dough. Cut it into strips and roll it up like a sausage.
Cut each such sausage into small pieces.
We make small balls from each ball.
Then, using a rolling pin, roll out each ball into a thin cake.
We spread it and spread the cheese filling in the middle.
We fold the future dumpling in half and carefully pinch the edges so that the filling does not fall out. This is the kind of dumpling I got.
Place the finished dumplings on a floured surface.
We put a pan with water on the stove and bring it to a boil. We send the dumplings into boiling water and wait for them to float. Personally, I let them float twice, as my mother taught me, and then I take them out of the pan.
Before serving, I add a piece of butter to the bowl with dumplings so that they do not stick together as a result. It is best to serve dumplings with cheese with homemade sour cream.
Important notes.
— If it is not possible to buy homemade cheese, then you can also use store-bought cheese, but then it is better to choose grainy.
– Homemade sour cream can be replaced with store-bought sour cream, but choose not powdered, but at least more or less natural.
