Eggplant dishes are especially relevant now, because the season of “blue” is just coming. Let’s not miss the opportunity to use a seasonal product, because it is affordable and useful.

Ingredients:
eggplant – 1-2 pcs.;
tomatoes – 2-4 pcs.;
chicken eggs – 3 pcs.;
mayonnaise – 1-2 tbsp. l .;
garlic – 1-2 cloves;
oil – for frying;
salt – to taste;
greens – to taste.

The method of preparing an eggplant snack.

For an eggplant snack, we will need one fairly large eggplant, or two small ones.

Eggplants are washed, peeled and cut into circles about 0,5 cm wide.

Then we put our circles in a deep dish, sprinkling with salt. This is to get rid of bitterness.

Let’s leave our eggplants for now and deal with other products. Tomatoes for this dish should be chosen ripe, juicy.

Wash the tomatoes and cut them into 0,5 cm wide circles.

Now let’s prepare the sauce. To do this, put a couple of tablespoons of mayonnaise in a cup and squeeze 1-2 cloves of garlic into it.

Drain the juice from the dishes with eggplants. Heat a pan with oil and fry the eggplant circles on medium heat on both sides until golden brown.

Eggplants love oil. In the sense that they absorb it willingly. And without it, they don’t fry well, they dry out more. Therefore, so that it is not too greasy, add the oil a little at a time. If all the eggplant circles do not fit in the pan at once, fry them in batches. While the eggplants are frying, break three eggs into a separate plate.

We salt them and beat them. When all the eggplants are fried, place them tightly in the same pan and pour beaten eggs over them.

Cover with a lid and fry like scrambled eggs. Meanwhile, chop the greens. I took traditional dill and parsley. You can take the one you like better.

When our “omelette” made of eggplant and eggs is ready, turn it over onto a plate.

Spread with mayonnaise and garlic sauce.

Then we lay out the circles of tomatoes. The tighter you manage to stack the tomatoes, the juicier and tastier the appetizer will be.

Sprinkle chopped greens on top.

And actually, the eggplant appetizer is ready.

All that remains is to cut it into portions and serve.

This snack is equally delicious both warm and cold. Sweet taste!
