Cooking burgers at home.
First, let’s deal with minced meat. You can take any, I prefer pork. Minced meat should be quite fatty, otherwise the cutlets will be dry.
We clean the onion, chop it. It is better to do it either on a fine grater or with a blender so that it has the consistency of porridge.
Combine minced meat with onion, mix thoroughly, add salt and black pepper to taste. Lately, I’ve been adding a bit of the all-purpose hot Uzbek seasoning, but it’s optional.
We cover the baking sheet with baking paper and form cutlets for future burgers. Of course, you can use a cooking ring or a strip of foil, but I’m not that much of an aesthete and I don’t need perfectly round patties. I make a ball from the minced meat, slightly beat it in my hands, and then knead it into a cake already on paper.
Then I put a small piece of butter on each cutlet to make them even juicier (I do the same with chebureks), a pinch of herbs de Provence and I can send them to the oven. At a temperature of 180 degrees, I bake for 20-25 minutes.
Of course, you can also fry in a pan, but in this case the cutlets will turn out to be too fatty. In the meantime, let’s make buns. I usually get the unsweetened ones in the baked goods section. Somehow I took a package of factory ones, but they turned out to be too high, I even had to cut out a piece of the middle. Cut the buns crosswise, grease both halves with mayonnaise and ketchup.
Then cut the tomato, cucumber and onion into thin slices. For the filling, I prefer not the usual onion, but the less bitter salad (sterling) or red. We spread the filling on the lower part of the bun. If desired, you can put a leaf of lettuce.
Cover the filling with a slice of cheese (I have regular hard cheese). It is important that the cheese is under the patty so that it melts.
We take out the finished cutlets from the oven and immediately put them on the cheese, cover with the upper part of the bun.
It’s almost ready, but you have to wait two more minutes! The burgers need to stay in the oven for the same amount of time so that the buns become warm. Sweet taste!
