How to cook aza in the Tatar style – a recipe with a photo

Today I will prepare a very tasty dish – Tatar-style azu.

beef meat – 700 g;
onion – 1 pcs.;
salt, pepper – to taste;
paprika – 1 teaspoon;
pickled cucumbers – 200 g;
tomato sauce – 150 g or tomato paste – 2 tbsp. l.;
potatoes – 1 kg;
garlic – 6 cloves;
parsley – 1 bunch;
allspice – 4-5 peas;
vegetable oil for frying.

The process of cooking azu.

The meat should be cut across the grain into strips about 1 cm thick.

Now it needs to be fried. Pour a little vegetable oil into the cauldron and heat it properly. You don’t need to mix the meat right away, wait until one side gets a golden crust. Fry over high heat.

Now you can mix. We continue to fry the meat over high heat for a few more minutes, then add salt and pepper.

Now pour broth or ordinary clean water over the meat. Liquids are poured 2 fingers above the meat. When it boils, reduce the heat and leave the meat to stew until it becomes soft.

Now finely chop the onion. Fry in a pan in a small amount of vegetable oil.

While the onion is fried over low heat until golden, cut the pickles into strips.

As soon as the onion has become golden, you can add cucumbers to it. Mix everything well and fry for 2-3 minutes.

At the end, add tomato sauce, paprika, mix and simmer for another couple of minutes, turn off the heat.

Clean and cut the potatoes into strips. It is better to take the one that does not boil.

Fry the potatoes in a hot pan with a small amount of vegetable oil until half done. The main thing is to get a golden crust from all sides. Salt a little. Do not cover with a lid.

Now add all the prepared products (frying and potatoes) to the meat directly in the broth. Add a bay leaf and peppercorns.

Mix everything well once. You can’t stir this dish anymore. Wait for everything to boil, then cover with a lid and reduce the gas to the lowest setting. Add salt to taste, if necessary.

Simmer for 10 minutes. We determine the readiness of the dish by how the potatoes are cooked inside. Meanwhile, chop greens and garlic.

When the dish is completely ready, throw in the greens and garlic, simmer for another minute and turn off the heat.

Arrange the finished dish on plates.
