How to cook baked eggplant with anchovies and mozzarella

1. Wash the eggplants and cut them in half to form boats. Grease with oil and bake in the oven for 20 minutes. You can also grill eggplants until soft. Salt, pepper, add spices to taste.

2. Put the anchovies on the eggplant boats, sprinkle with chopped greens. Cut the mozzarella into pieces, put on the eggplants. Sprinkle pine nuts on top.

3. Put the eggplants for 20 minutes. in an oven heated to 180 °C.
