How to cook beef stroganoff – a recipe for cooking the dish.

There are many recipes for beef stroganoff, but to some extent they are all similar. Beef stroganoff is a dish prepared from finely chopped pieces of beef covered with sour cream or cream sauce. Sour cream in this case gives acidity, and cream will add a little sweetness to the dish and give it a more delicate taste.

If you use only sour cream, then add it at the end, 2-3 minutes before the dish is ready. The total cooking time is about 30 minutes.

beef – 600 g;
flour – 1-2 tablespoons;
vegetable oil – 1 tablespoon;
butter – 2 tablespoons;
onion – 2 medium heads or 1 large;
sour cream – 150 g;
cream – 100 ml (approximately);
salt – to taste;
ground black pepper – to taste;
chopped greens – as desired;
for a side dish – mashed potatoes.

Mashed potatoes are ideal for this dish. Take care of the side dishes and cook the peeled potatoes in slightly salted water. As an option, you can prepare mashed potatoes with basil or mashed potatoes with milk.

Let’s start cooking beef stroganoff. 2 heads of onion, clean, cut into half rings.

Cut a piece of meat (mainly beef tenderloin or a thin edge) across the grain into slices about 0,5 cm thick (like a chop). Beat each piece slightly. Then cut the meat slices into small thin strips (the length of the strip should not be more than 5 cm, thickness 1-1,5 cm).

Roll the meat in flour, shake off the excess on a board.

Lightly fry the onion in a heated pan with vegetable and butter over high heat.

After reducing the heat, put the onion directly on the meat (having previously shaken off the excess flour). Simmer the meat on the onion for some time, after 5 minutes (until the onion is burnt), mix the meat, continue to extinguish.

Salt and pepper the meat. It is not necessary to overheat the meat (otherwise it may become hard), it is enough to get it “lacquered”.

Add 150 g of sour cream to the fried meat and onions, mix. Immediately add about 100 ml of cream, mix. Stew the meat for another 10 minutes or until soft, stirring occasionally. Let the finished dish stand for another 5-10 minutes.

While the dish is infused, drain the water from the boiled potatoes and prepare mashed potatoes. Place the mashed potatoes in a deep bowl, make an indentation in the center with a tablespoon. Place the beef stroganoff in the well. You can sprinkle chopped greens on top. It is great to serve this dish with pickled cucumbers and tomatoes.
