I bought a rabbit here the other day, and it had a liver. I brought the rabbit home, took out the liver and began to look at it. And it is quite small, 200-300 grams. What can be done with it so that it is enough for the whole family? She twisted and turned and decided to stew with onions in tomatoes.

In general, I can say that rabbit liver is soft, tender, without the slightest bitterness or other unpleasant flavors. This is not only a tasty, but also a healthy dish. The next time I buy a rabbit, I will definitely buy it with liver.
Ingredients:
rabbit liver – 1 pc.;
onion – 1 pc.;
carrot – 1 pc.;
tomato juice – 250 g (you can take tomato paste);
vegetable oil for frying;
salt, pepper, bay leaf to taste.

Carrots are grated and fried together with onions until golden brown.
At this time, cut the rabbit liver into small pieces.
