12 yolks;
125 g of sugar;
2 Art. l. cognac;
1 Art. l. orange liqueur or limoncello, if desired;
2 Art. l. orange or lemon juice;
1 tsp. orange or lemon peel.

1. Beat the yolks with a mixer with sugar at medium speed for 4 minutes until you get a lush, light foam.

2. Add cognac, liqueur (if using) and orange or lemon juice. Beat with a mixer at high speed for another 4 minutes, until the mass thickens.

3. Pour the gogol-mogol into dessert glasses, sprinkle with zest and put away for 1 hour. in the refrigerator, then serve.
