How to make mushroom soup from dried mushrooms?

I decided to use my express recipe for making soup from dried mushrooms. It consists in the fact that the mushrooms do not need to be soaked all night – literally half an hour is enough for us! But we will do it not in water, but in warm milk. This advice was shared with me by my colleague, who at one time presented me with these dried mushrooms!

Half an hour after soaking, the mushrooms can be boiled in two broths, and the third one can be left untouched – we will prepare our soup on it.

Ingredients:
— 30 ​​g of dried porcini mushrooms;
– 1 glass of milk;
— 5 potatoes;
— 1 carrot;
— 1 onion;
— 2 st. l. vegetable oil;
— 1 st. l. butter;
— 1 st. l. wheat flour;
– salt and pepper (as needed).

The process of making soup.

As I mentioned above, we pour warm milk over the dried mushrooms and set aside for 30 minutes.

After exactly half an hour, wash the mushrooms under running water, cover with water and put on fire, after boiling, immediately drain the water (it will be very dark) and wash the mushrooms.

Now we will have double 2 – pour water, bring to a boil, let it boil for 5-7 minutes, drain again (the water is already much lighter) and rinse.

Cover the mushrooms with water a third time, bring to a boil, reduce the heat and prepare mushroom broth.

In the process of all these manipulations, we have enough time to peel the vegetables (potatoes, onions and carrots) and chop them.

After the broth has boiled for 15 minutes, we throw in the potatoes.

Fry carrots and onions in vegetable oil.

When the potatoes are almost ready, add the frying to the pan and add salt.

In the meantime, put the necessary amount of flour on a dry heated pan and brown it, stirring constantly. When the flour changes color a little, add butter and quickly combine it with flour and send the resulting mass to the pan. Let it boil for another 5 minutes and turn it off.

Thanks to this move, the soup will be incredibly rich and of a very pleasant consistency. Well, you can only dream about the taste – this mushroom aroma can drive you crazy!
