For the dough:
wheat flour – 500 g;
instant yeast – 7 g;
barely warm water – 300 ml;
salt and sugar – 1 tsp;
olive or other oil – 2 tbsp. l.
For the filling:
cheddar cheese – 200 g;
feta cheese – 200 g;
Ricotta cheese – 200 g;
eggs – 4 pcs.;
garlic, parsley or coriander;
verschek oil – 40
Khachapuri is a delicious and very filling dish made from pizza dough with the addition of delicious cheese and eggs. This is a recipe for one of the best Georgian dishes.
The process of making khachapuri.
- In a large bowl, put all the ingredients for the dough: 500 g of wheat flour, 7 g of instant dry yeast, 300 ml of barely warm water, 2 tbsp. l. olive oil, salt and sugar. Knead the dough by hand or with a mixer for at least 10 minutes.
Leave the dough in a bowl covered with a damp cloth for 60 minutes. I often put the bowl of dough in a slightly preheated oven. Set the temperature to 35 degrees in advance. After a few minutes, turn off the oven, open the door and put the bowl with the dough so that it rises in the heat. After an hour, the dough should triple in size. After this time, put the dough on a table sprinkled with flour and knead it again for a while, and then form a ball.
Traditionally, at this stage you also put about 10g of butter on top of the filling (along with the egg).
