To prepare cupcakes, you should use ingredients at room temperature.

Wash the raisins well and pour cognac. Leave them for half an hour, stirring from time to time.

Grate the lemon peel on a fine grater.

Put the softened butter and sugar in a bowl, beat with a mixer at maximum speed until a light homogeneous mass.

Separate the yolks from the whites. Gradually add one yolk at a time to the butter, constantly beating with a mixer. We will use proteins later.

Add lemon zest and juice. Beat everything again with a mixer.

Then add sifted flour and soda quenched with lemon juice, mix with a spoon or mixer at minimum speed.

Next, beat the whites into a thick stiff foam. Add approximately 1/3 of the proteins to the dough and beat with a mixer.

Then add the remaining proteins and raisins with cognac, mix everything carefully with a spoon.

Put the forms on the baking sheet where the cupcakes will be baked and fill them 2/3 with the dough (if metal forms are used for baking, they should be greased with oil beforehand). Bake the cupcakes in an oven preheated to 180 °C for about 30-35 minutes.
