Liver is a favorite product in my family. I often cook it with sour cream, but, let’s face it, even this delicacy gets boring. You have to come up with something to surprise your loved ones.

I decided to make liver rolls. And for the quality of the filling, I used fresh cucumber, green onion and egg – a truly spring combination.

There is no complexity in my recipe, all products are available, let’s proceed to cooking.

liver (pork, beef, chicken – your choice) – 500 g;
milk – 0,5 glasses;
egg – 1-2 pcs.;
onion – 1 pcs.;
flour – 4-5 tbsp. L.;
black pepper.

For the filling:
boiled eggs – according to the number of rolls;
fresh cucumber;
green onion;
sour cream – 0,5 cups.

Let’s move on to the preparation of the liver roll.

We wash the liver, cut it into small pieces so that it is easier to turn it into puree. This can be done using a blender or meat grinder.

Add pieces of onion. If desired, you can add a little garlic.

Grind the liver with onions. Pour milk into it, add eggs.

Mix the liver mass, add salt, spices and flour. We mix again, you can help yourself with a mixer or blender. The mass should be viscous, but not thick.

In a heated pan, fry large liver pancakes according to the size of the bottom of the pan. Let the pancakes cool a little, apply a spoonful of sour cream. Leave for 10-15 minutes so that the liver pancakes-cakes are soaked.

Cut cucumbers lengthwise into small strips. We spread them together with green onion feathers on the liver cake.

Cover the top with pre-boiled eggs. For convenience, they can be cut into halves. Roll up with a roll, tie with a green onion.

Serve to the table. Such a dish can become a decoration of any festive table. And you can “play” with the filling! Enjoy your taste!
