Lobio in the oven – a recipe with a photo.

There are dishes that simply transport you to some country with their aroma and taste. Lobio is one of those dishes for me.

Lobio means bean in Georgian. In the classic lobio, beans with vegetables and sauce are stewed until the beans are soft, seasoned with a lot of cilantro. It is cilantro that does all the work. Here is this little herb, which looks like parsley and drives me crazy.

Returning to lobio, it must be said that there are many variants of it. Today I decided to talk about cooking beans in the oven in a pot and with meat.

Ingredients:
1 cup of beans;
1 bell pepper (or a handful of frozen peppers);
1 carrot;
1 bulb;
a couple of tbsp. l. tomato paste;
spices (suneli hops and others to taste);
greens (cilantro, parsley);
1-2 cloves of garlic;
salt to taste;
0,5 Art. l. sugar;
1 Art. l. without a hill of flour.

We soak the beans overnight.

Beans have increased in size. We wash it once more and transfer it to pots (up to half). Pour half a glass of water, cover with a lid and put in the oven for 40 minutes (180 degrees).

In the meantime, chop the onion, pepper, grate the carrot on a coarse grater. We send to fry until ruddy in a frying pan.

When the vegetables are fried, add a spoonful of flour and mix immediately.

We pour a glass of tomato juice, which we obtained from water and tomato paste, into the pan, add salt, sugar, spices and leave everything to simmer under the lid for 5-7 minutes.

We cut the meat into pieces and fry it on a sufficiently strong fire so that the juice does not have time to come out, with the addition of salt and spices until golden crusts.

After 40 minutes, take out the pots and put the meat and sauce in them. We leave a little space under the lid free (about 1 cm) so that there is a place to boil the liquid. Return the pots to the oven and leave for another 40 minutes.

Readiness of lobio can be determined by the beans. It should be very soft.

We take out the pots, squeeze the garlic and add finely chopped cilantro. We mix.

Our lobio is ready. Sweet taste!
