Meat in apples under marinade for dinner or a holiday.

I love all kinds of meat. It is interesting to experiment with it and it is pleasant to surprise them.

Ingredients:
pork loin – 2 slices (take pieces that are thicker, but with a uniform structure, taking into account that it will need to be cut in the form of a pocket. I used a loin on the bone);
large and juicy apple – 1 pc.;
broccoli for garnish – 400 g;
1 bulb;
mustard – 1 teaspoons;
thyme, a mixture of white, red and black pepper, parsnip, dried garlic and paprika (my standard mixture that I always use when roasting meat), salt.

For the marinade:
2 tbsp. l olive oil;
80 ml. white balsamic vinegar;
2 cloves of garlic;
2 tsp. thyme

How to cook meat.

First of all, you need to prepare the meat. To do this, each piece must be cut lengthwise in the form of a pocket, but not all the way. If the loin is on the rib, cut it to the bone.

Now we will prepare the marinade. Pour 2 tablespoons of olive oil into a bowl, add 2 teaspoons of thyme, 1-2 teaspoons of the meat mixture that I mentioned in the ingredients, squeeze out 2 cloves of garlic, add 80 ml of balsamic vinegar and mix well.

Now you need to rub the pieces of meat well on all sides with the marinade. By the way, despite the word vinegar in the name, balsamic vinegar is very different from traditional vinegar, which is disliked by many and even contraindicated. We do this both on the outside of the meat slices and on the inside – in the “pocket”. Do this carefully inside so as not to accidentally split the pieces in half.

After that, place the loin in a bowl with the marinade and leave for 1 hour at room temperature.

After an hour, you can start preparing dinner. Cut the onion into half rings, fry a little in olive oil, then pepper and salt, add a teaspoon of mustard and thyme on the tip of a knife, and mix well. Continue sautéing for another 1 minute.

Then we put the obtained aromatic mustard onion inside the pockets of our meat. We sew the edges with wooden toothpicks.

Heat vegetable or olive oil in a pan until almost boiling, and only then add the stuffed slices. Fry the loin over high heat in boiling oil. By the way, it is very good to cook this dish in the yard on the grill.

At the same time, we will prepare the broccoli for the side dish. To do this, it is enough to fry the broccoli for 10 minutes in butter.

Together with the meat or after, saute the apples cut into rings in boiling oil. The frying time is 15-20 seconds on each side.

To serve, put fragrant slices on a dish, cover it with sizzling juicy apples and add broccoli.

Apple juice, mixed with lard, which was separated from the meat by the marinade, drains and covers the meat with an incredibly tasty sauce. Literally. Sweet taste!
