Don’t know what to feed your loved ones in the heat? The best option is okroshka. This dish was loved everywhere, as, in principle, and Olivier’s salad, since the ingredients were available to any person, even with a small budget.
I recently learned that the name of the dish comes from the word “kryshish”, which perfectly reflects the whole essence. We chop all the ingredients finely, mix them in a pan and pour the dressing. Everything, a full-fledged summer dish that perfectly quenches thirst, is ready.
Most often, kvass is used to season okroshka. Probably, that’s why I didn’t like okroshka since childhood. And only when I met my husband’s family, I fell in love with them, because I tried their okroshka on kefir and mineral water. It turns out very tasty, and also useful, because kefir improves digestion and accelerates metabolism. Today I am going to share this recipe with you.
Ingredients:
potato – 6 pc.;
doctor’s sausage – 400 g;
chicken eggs – 5 pcs.;
fresh cucumbers – 4 large;
kefir 2.5% — 1 liter;
mineral water – 750 ml;
greens (dill, parsley) – 1 small bunch.
The method of cooking okroshka on kefir.
Boil potatoes and eggs. I had new potatoes, so I boiled them without the skin. If the dish will go with “old” potatoes, then you can boil them in a uniform. Cut the potatoes into small cubes.
Cut eggs into small cubes.
Cut the sausage and cucumbers into small cubes.
Finely chop the greens.
Mix all the ingredients in a saucepan and pour kefir.
Dilute with mineral water to the thickness you like. I like to use salty mineral water, such as Myrhorodska.
Sprinkle some herbs before serving. You can additionally serve sour cream, mustard and brown bread. Sweet taste!
