Pancake cake is a great idea not only for butter, but also for those cases when you need to prepare something quickly for a tea party on a holiday. The filling can be absolutely any, I will cook with cottage cheese.
Ingredients:
thin pancakes – 23 pcs.;
cheese – 600 g;
condensed milk – as a matter of fact;
powdered sugar – to taste;
cocoa powder – 2-3 tbsp. l.
The method of making a pancake cake.
At the heart of this cake, of course, are pancakes. We bake pancakes with your favorite recipe (see many recipes on our website), the main condition is that the pancakes must be thin. How many pieces, you decide. 13-15 pancakes will be enough, but I like the cake higher, so I bake more. For this cake, I needed 23 pancakes + 2 for decoration.
When the pancakes are ready, prepare the cream. The main component of my cream will be cheese. Any type of fat is suitable for cheese.
It is advisable to rub the cheese through a sieve or use a blender.
Now it is necessary to add condensed milk to the finished curd mass. My cottage cheese was quite dry and the condensed milk was thick, so I used a little less of a can. Add condensed milk so that the mass does not turn out too thin, otherwise it will leak later. Here we look at the quality of cheese and condensed milk according to the circumstances.
Then you need to add powdered sugar. From this moment we start trying the cream. Add as much powder as you like. My pancakes were not very sweet and in our family we all have a sweet tooth, so I used 150 g.
Now we divide the cream into two parts. Add cocoa to one part (if you don’t like cocoa or don’t have it at hand, then you can skip this stage).
We will get two types of cream. One simple cheese and one cheese-chocolate.
Let’s start assembling the cake. Place the first pancake on a plate and spread cream cheese on it, about 1,5-2 tbsp. l.
We put the second pancake on top and grease it with the second type of cream.
Add other pancakes in the same way, alternating the filling each time. As I said, I used 23 pancakes.
Decorate the top of the cake to your taste. You can decorate it with fruit, pour it with chocolate glaze, cover it with whipped cream and chocolate crumbs, in general, with everything that is at hand. I coated it on all sides with cream cheese.
And sprinkled with coconut shavings.
I decorated the top with two pancakes, making them into roses with the remains of the cream and decorating the center with a red currant berry.
Let the cake soak for at least 30 minutes. That’s how easy and quick you can make a cake.
After the cake stands and soaks well, it will not be too difficult for you to cut it into neat portioned pieces.
