Pearl porridge with tomatoes and mint

1. Boil the groats, but do not boil them. It is better if a little liquid remains in the pan, but the grains are crumbly. Salt the porridge while cooking.

2. Heat olive oil in a pan, add tomatoes cut into large pieces and mint. If the mint is dried, add it from the very beginning of frying. Chop the fresh mint coarsely, mash it in a mortar and add it to the tomatoes at the end. To salt

3. When the tomatoes are ready and you will feel the rich smell of mint, put the pearl barley in the pan, mix, stew for 3-5 minutes.

4. Serve the porridge, garnished with mint leaves.
