Ingredients:
for minced meat (proportions for the entire amount of fillet from a 2-kilogram pike):
900 g pike fillet,
1 large onion,
2 tablespoons of oil for sautéing,
100 g of fresh white loaf (or 40 grams of dried),
150 g milk,
100 g of cream 20% (maybe a little more),
egg white, 1
1 tablespoon of salt,
ground black and white pepper to taste.

Method of cooking:
We wash the pike from slime, clean it and divide it into fillets. About 1 kg is obtained. pure fish meat.

We make minced meat from it. Finely chop the onion and fry it in butter until soft and ruddy. Cut the loaf into small pieces and dry it in the oven, pour milk over it. Roll the fillet, onion and loaf twice in a meat grinder.

Now you need to beat the minced meat a little.

Add salt, black and white pepper, cream, whipped protein to the minced meat.

We make patties by wetting our hands in warm water.

Let’s fry until crispy. Bake in the oven for another 20 minutes.
