Pink marshmallow
We cook like this:
1. Soak agar-agar in water for 1 hour. Mash the strawberries in a blender, add 250 g of sugar, vanilla sugar and beat again with a blender.
2. Heat agar-agar with water almost to boiling point and stir so that it dissolves. Pour in 450 g of sugar, bring to a boil and cook for 5-10 minutes, until the syrup begins to stretch in a thin thread behind the spoon.
3. Beat the protein, add strawberry puree. Pour the hot syrup in a thin stream into the puree with protein, without stopping to beat until the mass becomes very dense and holds its shape.
4. Put it in a form covered with parchment and leave it for a day. Then cut and sprinkle with powdered sugar.
