Potato and clear darunas – a recipe for cooking the dish.

There is no flour in the composition, but there is an egg. On lean days, meat is successfully replaced with mushrooms, and for viscosity, potatoes are chopped very finely. After cooking, it is desirable to serve hot and eat immediately. You get the impression that you are eating fried potatoes with meat. Moreover, a small trick allows you to create the impression that there is much more meat than there actually is.

Ingredients:
pork or other meat – 400 g;
potatoes – 500 g;
egg;
sea ​​salt;
ground black pepper;
coriander or seasoning for meat, potatoes;
oil for frying;
onion – 100-140 g.

How to cook meatballs from potatoes.

Pre-soak the meat in salted water. Cut films, veins, if they are large and dense. Peel the potato and onion.

Cut the meat into pieces with a side of 1 cm. You can, of course, grind it in a meat grinder, but then you will not be able to implement the secret, thanks to which, when absorbed, it seems that there is much more meat.

It is also perfect to cut into strips. In fact, it does not matter exactly how you cut it, the main thing is that it is not too large.

Cut the onion into cubes. I do not remove the tails when cleaning, they are convenient to hold on to when slicing. The size of the cubes is any, but smaller ones are better. I exclude the meat grinder, as a lot of juice is released and flour or starch will have to be added to the cutlets.

I grate the potatoes on the coarsest grater. I exclude the meat grinder for the same reason – abundant release of juice. Liquid is needed only during fasting, when eggs have to be excluded, and without them everything falls apart. I replace the eggs with a spoonful of potato starch.

I combine meat, potatoes, onions, eggs, sea salt and other spices.

Knead by hand for a few minutes.

Now heat the oil in a pan and spread the resulting minced meat with a spoon. Fry on both sides until nice crust. I use strictly olive or corn oil in my recipes. I try to use sunflower only in raw form in salads, and when fried, it becomes very, very harmful after just a minute. By the way, olive is used more economically than sunflower and the high price is almost compensated.

Additional heat treatment is not required, but if you are afraid that the meat will not be fried, reduce the gas and simmer on medium heat under the lid for an additional 5 minutes. If you are afraid that it will burn, pour a few spoons of water into the pan. Cabbage salad with cucumbers is perfect for potato cutlets with meat.

Pay attention when cooking.

The first time you cook such unusual cutlets, they may fall apart, because everything comes with experience. If this happens, add another egg and some flour. Finer grinding of the potato mass (or half small and large) will also help.

— Beef and lamb take much longer to cook, so choose chicken, turkey or pork for quick cooking.

— The taste or aroma of mushrooms can be obtained by adding powder from dried mushrooms (any, whether forest or greenhouse).
