  1. Thoroughly wash and clean at least 1 kg of potatoes. Place the clean potatoes in a pot of cold water. The water should completely cover the potatoes. Boil it until soft. It can take 25-35 minutes (depending on the size and type of potatoes). Pass the completely cooled potatoes through a hand press or grind them in a meat grinder with a medium nozzle in a separate bowl.

Add 200 g of durum wheat flour to the same bowl. Break 2 eggs and add 1 tsp. salt without bitter. Knead all the ingredients into a ball. Do not knead the mass for a long time – only until all the ingredients are combined into a homogeneous dough.

Gnocchi dumplings can be of various shapes. You can prepare them in the form of dumplings. You can also make them into balls. However, the most popular is gnocchi with characteristic depressions. You can make them with a fork.

How to serve gnocchi?
You can heat a few tablespoons of ghee for 5 minutes with three sprigs of fresh rosemary (pan on low power). Pour over dumplings. Sprinkle all this with freshly ground pepper and grated cheese.

Advice: Instead of rosemary, you can give sage leaves. You can replace the butter with olive oil.
