In a pan with a thick bottom, mix water with sugar, vanilla sugar and lemon zest (you can take only vanilla sugar or only zest according to taste). We put it on the fire, after it boils, let it boil for one minute, then put the washed rice there and cook it on the slowest fire under the lid until all the water boils (the rice should boil strongly). Cool the rice, and then use a blender to grind it into puree. Add more sugar if needed. Put it (preferably in a metal container) in the refrigerator for 1 hour.

If you have an ice cream maker, then simply transfer it there and follow the instructions for making regular ice cream.

If there is no ice cream maker, then we do the following:
After an hour, take the rice puree out of the refrigerator and beat it with a mixer. Then we put it in the freezer for an hour. We take it out again and beat it, put it in the freezer. Then we repeat this procedure once more after an hour of freezing. We beat it for the last time after half an hour and put it in the freezer for the final freezing.

If it freezes too much, put it in the refrigerator for a while before serving. But it is better not to freeze it so much, the taste will be worse. It is better to put it in the freezer for half an hour after the last whipping, and then you can serve it immediately.
