Rice Veselka

1. Wash the rice and boil it until half done in salted water.

2. Peel the onion, finely chop it and fry it until translucent in olive oil. Peel the carrot, grate it and add it to the sauteed onion. Drain the liquid from the peas and corn and add them to the onions and carrots. Stew everything together for 5 minutes on low heat.

3. Add rice to the vegetables and simmer over low heat with the lid on until ready. At the end, add the dried basil, add salt if necessary and simmer for a few more minutes over low heat.

Serve hot as a side dish to meat, fish and poultry dishes.
