Brine is originally a very tasty dish, for many centuries it has rightly been called one of the most beloved and popular soups in the country. A hostess who has learned how to cook a delicious soup is always considered a “real talent”, and this skill is highly appreciated by all pickle lovers.

The word “pickle” has an ancient origin, it appeared in our lexicon in the 19th century and was immediately attached to this soup, before that it was called kaley and was prepared, as far as is known from various historical sources, from the 15th century. However, it should be noted that potash could be prepared not only on cucumber brine, but also on a solution of citric acid. The brine is being prepared exclusively on pickles.

According to their composition, pickles, like many other dishes, appeared in the kitchen a long time ago, can be very, very different. The main thing is the presence of pickled cucumbers in the soup, even brine is not always added (usually when the cucumbers themselves are not salty enough). As a rule, pickled cucumbers for soup are cleaned of skin and seeds, cut into strips or cubes and boiled with water or broth. Everything else in the preparation of pickle is a matter of personal preferences and taste.

I really like pickled soup with both rice and pearl barley, today I will share the recipe for this delicious soup. I cook it more often with rice than with pearl barley, as my relatives like it more with rice.

pork bones – 3-5 pcs.;
potato – 5 pc.;
rice – 1 handful;
carrot – 1 pc.;
onion – 1 pc.;
pickled cucumbers – 1-2 pcs.;
sunflower oil – for frying;
greens – to taste

How to prepare a pickle.

So, we will need pork bones, put the pot on the fire, pour water and cook the bones until half-cooked (remove the foam).

While the bones are cooking, prepare onions, carrots, and pickles, you can grate them or cut them into cubes, soak the rice in water.

I grated the cucumbers, do not drain the brine.

When the bones are almost cooked, add rice and diced potatoes.

When the potatoes are almost cooked, add cucumbers, and fry carrots and onions in oil
lower into the soup and cook over low heat for another 5 minutes. At the end, you can throw in greens.

It turned out a delicious, aromatic soup.
