A very interesting and original version of the long-known salad “Herring under a fur coat”. This recipe won me over with its originality and simplicity of ingredients and flavors.

lightly salted herring – 1 pc.;
beetroot – 450 g;
light mayonnaise – 10 tbsp. a spoon;
lemons – 1 pcs.;
gelatin – 4,5 hours. spoons;
water – 210 g;
shallots – 4 pc.;
Borodino bread – 1 loaf;
greens for decoration – to taste.

Preparation of New Year’s salad.

First of all, it is necessary to bake beets. I prefer baked beets to boiled beets, they retain more flavors and juices.

I baked the beets in a slow cooker, having previously wrapped them in foil for baking, so that all the juices remained inside.

I baked 2 times using the “Baking” mode (60 minutes), that is, it took me 2 hours. Of course, it will turn out faster in the oven, because the maximum temperature in the slow cooker is 180 degrees (at least in mine). You can check the readiness of beets with an ordinary toothpick, but you need to take into account that after that juice will ooze from the puncture site.

While the beets were baking, I prepared the forms for future portioned salads. I don’t have special rings and I used plastic beer glasses, cutting off the bottom and part of the top from them to make the shape as cylindrical as possible, I needed 8 pieces.

After the glasses are prepared, I cut 8 slices of Borodinsky bread.

With the help of a knife, she cut out the necessary shape of bread.

She left it to dry.

Prepared beets need to be peeled and cut into small pieces.

Then grind in a blender to a puree-like state.

Add 10 tablespoons of mayonnaise.

Juice of half a lemon.

Dissolve gelatin (4,5 teaspoons) in 210 ml of water, put on fire and bring to a boil, but do not boil.

Pour in all the beet puree. It will be quite a liquid mass. You need to leave it in a cool place so that it thickens a little. But before that, you must try it, add salt and, if you wish, ground pepper or coriander for a spicier taste.

And in the meantime, you can do herring. Clean the bones from the fillet, cut into small pieces and add 3 shallots, pre-chopped and marinated in lemon juice.

Spread the mixture of herring pieces and pickled onions evenly in all glasses with bread.

Meanwhile, the beet puree acquires a denser consistency.

You can safely spread it on glasses without fear that it will spread. It is advisable to lay it out so that the herring does not jump out at the edge, but remains inside. It remains to wait 1 hour for the salad to harden, it can be prepared in advance, a day in advance, but remove the form immediately before serving.

After removing the form, decorate the candles with greens, and a piece of lemon will play the role of the lit wick.
