Salad with eggplant, eggs and tomatoes – a recipe with a photo

Today we will prepare a very tasty eggplant salad with eggs and tomatoes. Everything we need will always be found in the refrigerator. Everything is prepared very simply!

Ingredients:
eggplant – 1 pc.;
boiled eggs – 2 pcs.;
onion – 1 pcs.;
tomatoes – 2 pcs.;
garlic – 1 cloves;
light mayonnaise – 1-2 tbsp. l.;
dill, salt, pepper.

Thin half rings of onion.

Cut the eggplant into small cubes.

Finely chop the dill.

Heat the oil in a pan and fry the onion until soft. Add the eggplants, mix and cook under the lid until the eggplants are soft and ruddy. Now cut the garlic, add it to the eggplants and simmer under the lid for another 1 minute.

Next, turn off the heat, sprinkle with dill and let cool under the lid.

While the eggplants are cooling, cut the eggs into cubes.

Cut tomatoes into cubes.

Eggplants have cooled down, take out pieces of garlic and mix. Add eggs and tomatoes to eggplants. Everything is salted, peppered, mayonnaise is added and mixed.
