Shrimp soup with rice » Cooking recipes with photos. home cuisine

Ingredients for a 1,5 liter pot:
— 0,5 kg of unpeeled king prawns
— 2 small bulbs
— 3 cloves of garlic
– 1/3 bunch of dill
— 2 handfuls of rice
— 25 g of butter
— a handful of cherry tomatoes (6-7 pcs.)
— 4 tablespoons of vegetable oil
– 1 lemon
— A few peas of allspice
— White pepper
— A pinch of nutmeg
– Salt

Method of cooking:
Thaw the shrimp, cover with water and bring to a boil. Let it boil for 10 minutes.

Strain and set the broth aside. Clean the shrimp. Leave the heads and meat.

Heat vegetable oil and butter in a saucepan. Put chopped pieces of garlic, 1 coarsely chopped onion, dill, lemongrass – a couple of slices 0,5 cm thick and shrimp heads. Fry everything for about 10-15 minutes.

Pour in the broth, add all the spices and simmer for half an hour at a low boil.

Drain again. Keep the broth. We won’t need the rest anymore.

Strain the broth, return it to the pan. Pour in the rice, add chopped cherries, onion cut into thin rings, chopped shrimp and a couple more slices of lemon, salt. Cook until the rice is ready.

Serve the soup with fresh dill.
